Golden Citra Ale

I was lucky enough to get a bulk load of Citra so I thought I’d finally get around to brewing again after almost 18 months. I’ve used my standard Golden Ale base and lightly hopped this one, but upped the planned ABV to 5.5.

2 x US05

Brew Day
Brew day was straight forward, but for some strange reason I cooled to 18 degrees, and when I turned the chiller off it dropped to 12 degrees. It took about 5 hours to get up to 18, but I pitched the yeast at 12 degrees anyway.

12 days @ 18c
2 days @ 20c
2 days @ 2c
Gelatine added when temp hit 2%

Tasting Notes
Clean  citrus up front with a peppery sharp bitterness, thin body and a light honey malt profile. At 38 IBU the bitterness was initially a bit much for the malt base but was more restrained after conditioning.  It would be interesting to see this around 25- 30 IBU. Champagne style carbonation with a clean white head and lots of lacing.  The ABV is a little high as this is more of a session beer style so should be around 5% rather than 5.8%, as being so easy to drink will get you into trouble on a hot day.. A very clean drinkable beer.
